Beautiful. I traded homemade English muffins for homemade granola a number of times. That stuff is mad addictive.

I've always been meaning to make my own granola, but have not come 'round to doing it. Maybe now is the time.

It’s very adaptable to what you prefer/can find. Coconut oil, olive oil. Syrup, honey, agave. Different nuts. Quick cook oats offer a different texture. I use the oil because I like the granola crunchy. If you are using dried fruit/coconut, my suggestion is to add it in after you’re done actively cooking (but while it’s cooling) as otherwise it gets pretty hard.
